Simone's research focuses on probiotics, postbiotics, and the human microbiome, with particular attention to host–microbe interactions and the development of functional foods. Author of about 150 peer-reviewed papers and holder of several patents, he has contributed to advancing both fundamental knowledge and industrial applications in microbial biotechnology, while also shaping scientific discourse on regulatory and commercial frameworks for biotics.
