Simone graduated in Food Science and Technology at the University of Milan and completed a Ph.D. in Food Biotechnology. He  held the position of Associate Professor in Microbiology at the University of Milan from 2015 to 2023 and has recently become a Professor of Microbiology at the University of Milano-Bicocca. Simone also secured a position as an Adjunct Professor in General Microbiology at Tampere University of Technology. Simone has been instructing the course "Probiotic Science and Applications" since 2010. His scientific activity focuses on applied microbiology and microbial biotechnologies, with specific emphasis on food microorganisms, probiotics, and human microbial ecosystems, as documented by 120+ publications in the field (https://orcid.org/0000-0002-8673-8190).
